inspiration is “seasons”. Here’s my mirror cinquain.

The hand
that seasons food
does not need to measure
the salt that coaxes onions glaze.
Cooks know
secrets.
A pinch is never just a pinch;
it is gathered knowledge
of every meal
that came
before.
To season well
with never bland regrets,
listen to what the pan asks you
to do.

Over seasoning can ruin the food by masking natural flavors, creating unpleasant textures, or making dishes inedible.

Without a doubt, Jim. It’s always good to err on the side of caution when it comes to seasoning. Salt can be added, but it’s very difficult to decrease it.

I totally ruined a seafood paella by putting too much saffron in it, as you only need a pinch of that spice.

If you ever have that problem again, add more rice and broth.

The best way to cook–season by taste.
I love this song! Did you see that move “A Single Man”? Saddest movie ever but every time I hear this song, I can see Julianne Moore and Colin Firth’s dance scene in it.
